From this post by [livejournal.com profile] kshandra:

While looking at their menu to decide what I'm having for lunch today, I noticed that The Old Spaghetti Factory is offering gluten-free pasta. I

Thanks; I sent'em email and asked about potato starch. Tomatoes will of course still be a problem, but there's always alfredo sauce.

Neat! I wonder if they're using the lentil pasta that [livejournal.com profile] jolhoeft recently told me about? Anyway - we have an Old Spaghetti Factory here, I'll have to go check 'em out. Thanks for the tip!

BTW--I like your icon.

So is there some problem with you having gluten now? I'm sorry; I remember your bread machine with great pleasure.

Yes, there is. I had food sensitivity testing back in August, which showed that I'm allergic to wheat, spelt, and other glutinous grains; also dairy, and nightshades (i.e. potato and tomato). There are other miscellaneous items as well, but those are the big groups. I went on an elimination diet and felt much better, and I've found that when I eat wheat, I not only have lower-GI digestive issues, but also produce a lot more mucous. Since mucous (over)production interferes with singing, I'm finding it much easier to sing, for longer periods of time, now that my throat isn't in a state of constant low-level irritation.

I've been able to re-introduce dairy to a limited extent, but every time I've had wheat, the results have been unpleasant, and so I'm learning to eat differently, and feeling the better for it.

Well, I'm sorry you can't have most bread anymore (though there are recipes for gluten free bread--I think they use gum arabic to get the same stretchy effect as gluten to trap the CO2 from the yeast--let me know if you want me to check my bread machine books).

But I'm glad you're in better health.

I've just updated my post to include the reply I got from them this morning; they're currently testing a corn rotelli in some of their markets.

*laughs* S'what I get for being late to the party. [livejournal.com profile] technoshaman and [livejournal.com profile] cflute have already asked the questions I had. :)

Nice to know about, although I am not in the area. However, I am very familiar with gluten free foods. Thomas, my younger son, who is severely autistic, has a gluten allergy. In some cases, and Tom is one, gluten is linked to autism. When we discovered this back in '95 (and also an allergy to casein--milk protein), we promptly put him on a GF (and casein free) diet.

Don't know what the Old Spaghetti factory does, but we have found that Tinkyada makes the only decent GF pasta we could find in stores. Everything else we tried turned to mush. Tom adores spaghetti, so this was an important discovery for us.

I've heard about the gluten/autism connection before; I've got a couple of Aspies on my f'list, as well as some parents with kids at various places in the spectrum. There is, in fact, an OSF in Minneapolis, but from the letter I received this morning (which I have now added to my original post), it is not one of their test markets for the GF pasta.
